In Season Now – Asparagus

Here at Vanilla in Allseasons, we love a bit of asparagus! Fresh, crisp and delicious,
this wonderful veg is in season from April through to June.

Why not head to your local farmers market or green grocers to pick some up?
Once picked, asparagus loses flavour and tenderness quickly, so if at possible
it really is worth eating it on the day you buy it in order to enjoy the best
flavour and texture.

Asparagus

If you’re preparing and serving it at home, follow these easy steps –
Wash in cold water and remove the bottom ends of the stalks (with fresh asparagus they will snap off cleanly).
Boil or steam quickly until just tender, around 4 to 7 minutes depending on thickness.

Try serving it lightly steamed and with a little butter and sea salt, or a side dish of horseradish.
It also works beautifully with some Parmesan shavings sprinkled over the top.
Simply delicious – Enjoy!

the feedback has been nothing short of phenomenal!

Our prawn, papaya and mango salad is a great way to kick off a meal. It’s light and fresh and simply delicious!

Always a favourite, our fillet of beef served with a rich shin pie comes with crisp fresh veg,
creamy mash and lashings of scrumptious gravy!

Our ‘Build Your Own Ice Cream Sundae’ is a fun and sociable way to end your meal and a sure fire
way to get your guests talking and laughing together. After all, who doesn’t love a bit of ice cream?

Hannah & Conor’s Heaton House Farm Wedding

Last summer, we catered for a fantastic, fun and romantic wedding at the beautiful Heaton House Farm.

Amy and Conor wanted to treat their guests to food that was fun, sociable and of course… absolutely delicious!

Their menu consisted of the following…

To Commence
Leek and potato broth with thyme snippets

Main course
Braised pork belly with smoked bacon and apples with kale colcannon potatoes
and bowls of the fresh panache of seasonal vegetables served in the middle of the table.

Warm chocolate brownie with vanilla ice cream
Sticky Toffee pudding with vanilla custard
White chocolate and raspberry cheesecake with a berry crush

Something Sweet – Apple Tarte Tatin

Last night we served up a special dinner. Lucky guests were treated to this lovely dessert – an elegant individual apple Tarte Tatin.

Warm, rich and sticky, served with fresh sliced berries, crème anglaise and a hearty portion of delicious Buttertons ice cream.
We added an exciting element with a sweet and crunchy caramel decoration.

These were met with a lot of excitement!

Shocking Report About Guests at Corporate Events

One of the golden rules at any wedding or special event is to keep your guests happy! An enjoyable experience
is much harder to achieve if guests are left hungry or bored. If you are looking to impress new clients or longstanding
business partners, rumbling tummies are not the way!

Here at Vanilla in Allseasons we always make a point to ensure our clients and their guests have plenty to eat and never
ever feel ignored. It’s a big part of our job and we take pride in it.

As a catering company, we feel that it is our responsibility
to not only serve fantastic food, but also to be sure that all guests are happy and well looked after.

With this in mind, we were a little shocked (although unfortunately not surprised) to read this report from
Caterer & Hotelkeeper.co.uk. According to their article, ‘most guests leave corporate events hungry’.

Event catering is our passion, and we find it really frustrating to hear these sort of figures.

Fun Wedding Food – Build Your Own Burgers!

Increasingly, we have seen a demand for more casual and sociable food options at weddings and events.
Many couples are selecting food that they love and feel represents their personal style, over more formal or traditional choices.

We love to help our clients with their special requests, and seeing them and their guests enjoy and delight in their choices makes
us very happy! Last week, we catered for the fantastic wedding of Mark and Amy at the beautiful Heaton House Farm.
They wanted a delicious and fun menu for their guests to enjoy on their special day.

We served up a scrumptious array of canapés to get everyone warmed up –

Canapés
Croute of sun dried tomato, caramelized red onion & mozzarella cheese
Fish and chips
Tiger prawn with pak choy, garlic and chilli
Peking duck pancakes with hoi sin sauce
Manchester Egg (a pickled egg coated in black pudding and sausage meat, and deep-fried until golden-brown)

This seemed to get everybody in the mood for more! We encouraged everyone to roll up their sleeves and enjoy some hearty
starter dishes, served on the slate or in bowls for guests to share.

Potato skins, with chicken and bbq sauce with Monterey Jack
Pork ribs with a sweet and sour sauce
Buffalo wings with a chilli sauce and blue cheese dressing
Battered tiger prawn with a smokey sauce
Courgette Fritters
Charcoal grilled sweetcorn

After this round, everybody was raring to go for the next course, a ‘build your own burger’. This was really fun and
everybody thoroughly enjoyed creating their burgers (and eating them of course!)

Oak smoked Bacon (on the chopping board)

At this point there were a lot of full tummies, but somehow, as usual, everybody seemed just
about able to fit in some delicious desserts!

Dessert

A Miniature trio of puds –
Apple pie with a soft whipped cream
Peanut butter ice cream
Warm chocolate brownie

This menu choice was really fun to prepare and serve, Mark and Amy’s lucky guests absolutely loved it
and everybody enjoyed the carefree and sociable style of service.
