A Feast Fit for a Balbier Bride!

This week, we had some exciting guests visiting our tasting room here at Vanilla in Allseasons HQ!
Dynamic mother and daughter duo and darlings of the wedding dress industry, Charlotte Balbier and Amanda Wyatt.

They visited us to sample a selection of potential meals to be served at Charlotte’s impending nuptials to Mr Edward “Teddy” Bedford.

This one looks set to be a seriously fabulous affair! So, what do you serve to the queens of the wedding industry? No pressure!
We were given a free reign to show them what we could do, it was rather like the Master Chef kitchens here at HQ, with our chefs battling out to impress our guests.

We served up a selection of delicious soups…
Jerusalem Artichoke wit truffle oil
Roast root vegetable with carrot crisps
Pumpkin and Parmesan
Pea and Scallop soup

We also served fillet of beef cooked two ways…
Fillet of Cheshire Beef wrapped in Air dried Ham, and braised short rib with Potato fondant sticks, Celeriac and Carrot puree, Merlot jus
and

We topped it off with a box of sweet and delicate macarons from Mum’s Macarons. We hear on the grapevine that caramel chocolate was Charlotte’s favourite.

So, what will they choose for the big day? You’ll have to wait and see!

Shades of Gold

This weekend we catered for a fantastic wedding at the very beautiful country venue, Heaton House Farm. We certainly seemed to have the Midas touch. One colour kept popping up throughout the day – glorious gold!

Heaton House Farm looked stunning surrounded by a blanket of rich seasonal colours and inside, the venue looked spectacular! From the stylish gold charger plates to the gold trimmed glasses provided by our friends at Whitehouse Crockery, the tables looked the epitome of Autumn style.

Marvellous Macarons

In recent years, we have seen a rise in the popularity of macarons (macaroons) for special events, weddings and parties. These colourful sweet treats make for wonderful favours, canapes or even piled high as wedding cakes. Here at Vanilla in Allseasons, we just can’t get enough of them!

macoroons

One of our favourite new suppliers is local company, Mum’s Macarons. Owner Ruth creates the most delicious and delicate homemade macarons in a vast array of colours and styles from her kitchen in Gawsworth, just a few miles from Vanilla HQ.

A Thankyou for a Fabulous Feast!

You might remember, a few weeks ago we shared the menu for Taz and Sarah’s fabulous Arabic feast. Our chefs created all of this sumptuous food for their wedding celebrations, and we can confirm that it went down a treat!

Today, we received this lovely thank you message…

“Hello,

Sorry for the delay in this message but we went straight off on our
honeymoon!

THANKYOU SO MUCH!

The food was absolutely incredible at our wedding and was definitely the
best many had ever tasted! All the compliments we were given should really
have gone to you and you’re team. I think it was Liz who looked after my
table and she was just lovely. Super helpful and not intrusive at all!

So yeah THANKYOU for helping us make out vision come to life!

Sarah and Taz”

Thanks to Sarah and Taz for the wonderful feedback, we thoroughly enjoyed being a part of your special day.

We love to create special, personal menus for our clients. If you would like to discuss your ideas for your own event, please feel free to get in touch

Mold Food & Drink Festival

This weekend pays host to the 8th Mold Food & Drink Festival in Flintshire, North Wales. Last year’s festival attracted a record 15,000 visitors over the weekend and they are hoping for a repeat this year.

Mold Food & Drink Festival

The festival is a showcase for the fabulous food and drink produced in the local area and welcomes exhibitors from around the country too. It makes us beam with joy to see local produce celebrated, as we are proud to source our produce from suppliers in the area. Over 100 producers will showcase a huge variety of delicious food and drink.

There’s also cookery demonstrations from celebrity chefs Rosemary Shrager, Graham Tinsley and Brian Mellor, foodie workshops and activities, live music and children’s entertainment.

Mold Food & Drink Festival

The festival also aims to promote the talented local chefs and encourage young people to take an interest in local food through various competitions.

Tickets are £5 for adults, £2 for children or £10 for 2 adults and 2 children. For more information, visit the website.

Greengages

Greengages are a sweet and juicy type of dessert plum that range in colour from yellow to dark-green, and can be speckled with burgundy. They have a soft, delicate, aromatic flesh that are best appreciated raw.

Greengages

They have a very short season in August and September. When bought from shops and markets, it’s impossible to tell until you bite into it whether it is ripe or not. They are worth poaching and freezing for later in the year, if not store at room temperature and eat as soon as possible after purchase.

If cooking with greengages, crème fraîche or Greek-style yoghurt will enhance their natural sweetness. Vanilla and almond will complement their flavour in a pie, crumble or sponge. Or if you want to turn it into a preserve, add lemon juice to help them set.

Plum Sponge

If you want to give greengages a try, this Steamed Plum Sponge with Cinnamon Custard recipe from BBC’s James Martin should have you heading out on the hunt for greengages.

For more information on the plums, there’s an article featured in The Independent.
