Courgette, Feta & Hazel Nut Salad

Courgettes are at their best right now, but many people are unsure how best to use them. This warm hearty salad is healthy, filling and simply delicious.

Use a potato peeler to slice strips of courgette then griddle or quick fry them with a little olive oil. Toss with spinach, salad leaves, hazel nuts and feta.

Drizzle with a little dressing and viola! A perfect healthy lunch or light dinner.

Glorious Gooseberries

Gooseberries are often overlooked and overshadowed by that other, rather famous summer fruit, the strawberry. Although you could say the Gooseberry is ugly in comparison to it’s pretty red counterpart, these hairy green berries are actually rather delicious when prepared the right way.

Gooseberries have a sharp, sweet tang which works perfectly with a summer pudding or savoury sauce. Why not get a bit adventurous and give them a try? Here are some of our favourite recipes –

Give a Fig!

Much like the fruit, fig season is short, but sweet. We absolutely love them! Simply sliced, they perfectly compliment a cheese board or summer salad.

If you fancy something a little more adventurous, this recipe makes a wonderful and impressive starter for a dinner party.

Split them, stuff them with blue cheese and wrap them with prosciutto. See the full recipe here
