Wedding Food at Upper House Hayfield

Last weekend our team catered for a fantastic wedding in the spectacular surroundings of Upper House Hayfield. The bride and groom looked fantastic, the sun shone, the venue looked incredible and everyone had a fabulous day.

We had lots of hungry guests to cater for!

We kept rumbling tummies at bay with a selection of delicious canapés. We served –

Chicken marinade in soy, ginger, garlic with a peanut sauce
Lamb kofta with a cucumber and mint yoghurt
Parmesan shortbread thins with goats cheese and oven dried cherry tomatoes
Smoked salmon and prawn crostini
Tiger prawn with pak choy, garlic and chilli
Peking duck pancakes with hoi sin sauce

When everyone had mingled, sipped some fizz and nibbled a few canapes, we served a buffet to the tables in the historic medieval banqueting hall. The served buffet food included –

Pan fried red mullet with tomato & herb salsa.
Salmon marinade in soft herbs
Tiger prawns in a herb & garlic butter.
Thai Green chicken curry with a coconut rice
Beef stroganoff
Roast mushrooms stuffed with goat’s cheese & sun blushed tomato topped with a herb crumb
Olives with garlic and chilli

Sides –
Warm new potatoes rolled in Olive oil, red onion and soft herbs
Cherry tomato, rocket & pine kernel
Greek salad, mixed leaf with a honey & mustard
Warm new potatoes rolled in Olive oil, red onion and soft herbs
Cous cous with fresh spring salad vegetables
Spinach & new potato and pancetta

Dips:
Lemon and Coriander hummus, tomato salsa, spring onion crème fraiche, roast butternut squash and blue cheese, cannelloni bean and confit garlic

Artisan breads with balsamic and oil

Then came everyone’s favourite course, the desserts! We served miniature trio’s

Blue berry frangipan with a vanilla custard
White chocolate and raspberry cheesecake with a berry crush
Chocolate brownie with a sweet whipped cream
